Tiramisu Cupcakes

Ingredients
- 250 g flour
- 2 tsp baking powder
- 2 tsp vanilla extract
- 3 Free-range eggs, beaten
- 1/2 cup Ayrshire milk
- 550 g castor sugar, plus extra for dipping the pastry shapes
- 250 g butter
- 3 tsp strong coffee
- 1/2 tsp marsala, for drizzling
- nougat pieces, to garnish

Cooking Instructions
To make the cupcakes:
- Preheat the oven to 180ºC.
- Line a couple of 12-muffi n pans with baking cups. Combine all the ingredients and mix for 3 minutes until well blended. Spoon into the baking cups and bake for 15 to 20 minutes, or until golden.
- Allow to cool on a wire rack.
To make the icing and decorate:
Thoroughly mix the sugar, butter and coff ee, and pipe the mixture onto each cupcake. Drizzle with Marsala and top with the nougat pieces.
