Tiramisu Cupcakes

Ingredients

  • 250 g flour
  • 2 tsp baking powder
  • 2 tsp vanilla extract
  • 3 Free-range eggs, beaten
  • 1/2 cup Ayrshire milk
  • 550 g castor sugar, plus extra for dipping the pastry shapes
  • 250 g butter
  • 3 tsp strong coffee
  • 1/2 tsp marsala, for drizzling
  • nougat pieces, to garnish

Cooking Instructions

To make the cupcakes: 

  1. Preheat the oven to 180ºC.
  2. Line a couple of 12-muffi n pans with baking cups. Combine all the ingredients and mix for 3 minutes until well blended. Spoon into the baking cups and bake for 15 to 20 minutes, or until golden.
  3. Allow to cool on a wire rack.

To make the icing and decorate: 
Thoroughly mix the sugar, butter and coff ee, and pipe the mixture onto each cupcake. Drizzle with Marsala and top with the nougat pieces.
