Kitchen Craft Episode 50: Creamy mussels

And really so easy to make!
If you were waiting for a sign to cook mussels from scratch: here it is. Chef Clem shows you just how easy (and delicious!) it can be.

Ingredients

  • 3 T butter
  • olive oil
  • 300 g leeks, washed and roughly chopped
  • 2 kg fresh mussels, cleaned
  • 1 cup pouring cream
  • Woolworths Garlic Butter-filled Ciabatta, heated, for serving
  • Parsley, chopped, to garnish

Cooking Instructions

  1. Heat the butter and olive oil in a pan over a medium heat, then add the leeks. 
  2. Cook the leeks until soft but not caramelised. 
  3. Add the mussels and stir through, coating the mussels in the leeks and butter. 
  4. Cover with a lid and steam for 5 minutes. Once most of the mussels have opened, at about 7 minutes, pour in the cream and cook for a further 3 minutes. Discard any mussels that don’t open.
  5. Serve the mussels with the ciabatta, garnished with parsley.
