Kitchen Craft Episode 50: Creamy mussels
And really so easy to make!
If you were waiting for a sign to cook mussels from scratch: here it is. Chef Clem shows you just how easy (and delicious!) it can be.

Ingredients
- 3 T butter
- olive oil
- 300 g leeks, washed and roughly chopped
- 2 kg fresh mussels, cleaned
- 1 cup pouring cream
- Woolworths Garlic Butter-filled Ciabatta, heated, for serving
- Parsley, chopped, to garnish

Cooking Instructions
- Heat the butter and olive oil in a pan over a medium heat, then add the leeks.
- Cook the leeks until soft but not caramelised.
- Add the mussels and stir through, coating the mussels in the leeks and butter.
- Cover with a lid and steam for 5 minutes. Once most of the mussels have opened, at about 7 minutes, pour in the cream and cook for a further 3 minutes. Discard any mussels that don’t open.
- Serve the mussels with the ciabatta, garnished with parsley.
