Clay-pot coffee (café de olla)

Ingredients

  • 4 Tbsp freshly ground coffee
  • 2 Tbsp dark brown sugar
  • A few strips of orange peel
  • 1 cinnamon stick
  • 1 star anise
  • 2 allspice
  • 2 cloves
  • 1 litre water

Cooking Instructions

Ingredients:
1 litre water
2 cloves
2 whole allspice
1 star anise
1 cinnamon stick
Orange peel, a few strips
2 Tbsp dark brown sugar
4 Tbsp ground coffee

A fragrant coffee is traditionally made in a clay pot, but a small saucepan will also work.

  1. Heat the water with the flavourings until boiling.
  2. Simmer for a few minutes, then stir in the coffee.
  3. Simmer for a further minute.
  4. Remove from the heat and allow to steep for about 5 minutes.
  5. Strain into small cups.
