Chai iced tea and coconut granita

Ingredients

  • toasted coconut, shavings, to serve
  • 500 ml chai flavoured rooibos brewed iced tea
  • 1/2 tin condensed milk
  • 1 orange, zested
  • 1 star anise
  • 1 cinnamon stick
  • 1 tin coconut milk

Cooking Instructions

  1. Place the coconut milk, cinnamon stick, star anise and orange zest into a pot, then bring to the boil.
  2. Remove from the heat, the leave to steep for 5 minutes.
  3. Remove the spices, then stir in the condensed milk and brewed ice tea.
  4. Pour into a rectangular freezer-safe dish, then freeze for at least 4 hours or until completely frozen.
  5. Using a fork, scrape along the surface of the granite to make shards.
  6. Serve in little cups topped with toasted coconut shavings.
