Ingredients
- 2 packets Free Range Spiced Rack of Lamb
- Red onions, to roast
- Whole garlic bulbs, to roast (optional)
- 700g Christmas Brussels Sprouts
- 3 T olive oil
- Sea salt and freshly ground black pepper, to season
- Fresh lemon, to drizzle over the sprouts
- 8 pears, peeled
- 3-4 cups red wine*
- 4-6 T brown sugar
- 2 star anise

Cooking Instructions
For a classic – and remarkable easy to make – Christmas feast, try your hand at this delicious spread of rack of lamb with tangy poached pears and roasted Brussels sprouts. Ten minutes of prep work and you’re done! No hours on end in the kitchen for us …
- Place the lamb in an oven-proof dish, add some quartered red onions (and whole garlic if you like), drizzle with olive oil and cook as per packaging instructions.
- To make the pears, place in a pan with red wine, sugar and star anise. Cover with a piece of greaseproof paper and simmer for 30 minutes or until soft. Drain on a paper towel.
- Meanwhile, drizzle the Brussels sprouts in olive oil, season with salt and roast at 180°C until golden.
* Don’t want to use wine? You could also poach the pears in verjuice.
