Rib eye steak

Ingredients

  • 30 ml brandy (optional)
  • frozen steakhouse cut potato chips, to serve
  • 4 tbsp Woolworths green peppercorns in brine, drained
  • 2 cups cream
  • 60 ml beef stock
  • 50 g butter
  • olive oil
  • salt and pepper
  • 2 Woolworths rib eye steaks

Cooking Instructions

  1. Start your fire and get the coals searing hot.
  2. Rub the steaks with olive oil, then season generously with salt and pepper. Cook the steaks on the hot fire until done to your liking, then set aside and leave to rest while you prepare the sauce.
  3. Place a pan onto the braai, melt butter then add the green peppercorns and leave to saute gently for a minute.
  4. Add the brandy, then flambe to burn off the alcohol, if using. Add the stock, to deglaze.
  5. Pour in the cream then leave to simmer until reduced. Season to taste, stir in the parsley, then serve the sauce spooned over the steak alongside the chips or baked potato.
