Ingredients
- 2 cups oat bran
- 2 ½ cups cake flour
- 300 g brown sugar
- 2 t mixed spice
- 2 t bicarbonate of soda
- 2 cups milk
- ½ cup canola oil
- 2 free range eggs, beaten
- 100 g dried cranberries
- 50 g rolled oats

Cooking Instructions
Chef Clem’s oat bran muffins are the perfect way to start the day, and with a batter that will last for 30 days in the fridge, you’ll always be 15 minutes away from freshly baked perfection.
- Combine the oat bran, cake flour, brown sugar and mixed spice in a large mixing bowl.
- In a separate bowl, mix the bicarbonate of soda and milk. Add the oil and eggs and mix well. Pour into the dry ingredients to form a thick batter.
- Place the mixture in a container with a tight-fitting lid and refrigerate overnight or for 6 hours.
- Heat the oven to 180°C. Grease a muffin/cupcake baking tray with butter or non-stick cooking spray. Spoon in the batter. Add the cranberries and swirl into the batter. Sprinkle over some oats. Bake for 15 minutes or until a cake tester comes out clean.
