French toast with strawberries

Ingredients
- 8 Free-range eggs, beaten
- 1 vanilla pod, split and seeds scraped out
- 4 Tbsp sugar for the egg whites
- 4 Tbsp canola oil, plus extra for greasing
- 4 slices sourdough bread, sliced, to serve
- 400 g strawberries, chopped
- 3 tsp rose water
- 4 Tbsp water
- 330 g Castor sugar
- icing sugar, for dusting

Cooking Instructions
- Beat the eggs with the vanilla seeds and sugar.
- Heat the canola oil in a nonstick pan over a medium heat. Soak the bread in the egg for 2 minutes, then fry the egg-soaked bread for 3 minutes on each side.
- Slice the strawberries and mix with therose-water, water and caster sugar. Steep for5 minutes, then spoon over the French toast.
- Dust with icing sugar before serving.
