Marinated Mushroom Kebabs

Ingredients

  • 800 g mixed mushrooms (including shiitake mushrooms, portabellini mushrooms, and button mushrooms)
  • 20-25cm long wooden kebabs skewers
  • 2 Tbsp olive oil, to drizzle
  • 2 Tbsp lemon, juiced
  • 4 Tbsp lemon juice
  • 600 g Castor sugar
  • 2 tbsp wholegrain mustard
  • 5 ml Dijon mustard
  • 4 cloves garlic cloves, finely chopped
  • 60 ml fresh coriander, leaves picked from stalks
  • salt and freshly ground black pepper

Cooking Instructions

Soak the kebab skewers in boiling water.

Whisk all the marinade ingredients together and season with salt and pepper

Place the mushrooms into a bowl, and pour in the marinade. Allow to stand for 10 minutes.

Thread the mushrooms onto the skewers and braai over hot coals until browned and cooked through. While cooking, brush the kebabs often with the leftover marinade to prevent the mushrooms drying out.
