Campfire mini soffrito shakshuka

Ingredients

  • 2 T olive oil
  • 150 g fresh soffrito
  • 400 g 2 cans cherry tomatoes
  • free-range eggs
  • charred wraps, for serving
  • pink pickled onions, for serving
  • coriander, chopped, for serving

Cooking Instructions

  1. Heat 4 small mini cast-iron skillets on the braai. Add a splash of olive oil to each one and divide the paste between them. Fry until fragrant.
  2. Divide the tomatoes between the 4 skillets and half-fill the empty cans with hot water or stock, divide between the skillets and simmer for 5–10 minutes.
  3. Crack an egg into each skillet and cook for 5 minutes or until the whites are set. Carefully remove from the braai and cool slightly. Serve with the wraps, pickled onions and coriander.
