Crostini with bacon & strawberries

The combination of smoky bacon, sweet strawberries and creamy goat's cheese make for a simple but decadent start to dinner.

Ingredients

  • 1 ciabatta loaf, toasted, for serving
  • 3 Tbsp olive oil, to drizzle
  • sea salt and freshly ground pepper, to taste
  • 250 g streaky bacon, parcooked
  • 100 g goat's cheese, crumbled
  • 200 g strawberries, chopped
  • 2 Tbsp balsamic crema
  • mint

Cooking Instructions

  1. Preheat the oven to 200°C. Thinly slice the ciabatta lengthways using a serrated knife. Arrange the slices on a baking tray, brush both sides with olive oil and season. Bake for 7 to 10 minutes, or until crispy and toasted.
  2. Heat a frying pan over a high heat and fry the bacon until crispy.
  3. Serve the crostini with the bacon, goat’s cheese, strawberries and balsamic cream. Garnish with mint or coriander microgreens.
