Tiramisu cupcakes

Ingredients

  • 3 cups + 2 tbsp flour
  • 2 tsp baking powder
  • 50 g castor sugar, plus extra for dipping the pastry shapes
  • 500 g softened butter
  • 3 tsp strong coffee
  • A few drops vanilla extract
  • 4 Free-range eggs, beaten
  • 1,5 L milk
  • 550 g castor sugar, plus extra for dipping the pastry shapes
  • 1- 2 Tbsp marsala
  • 6 pieces nougat, chopped

Cooking Instructions

  1. To make the cupcakes: Preheat the oven to 180ºC.
  2. Line a couple of 12-muffin pans with baking cups. 
  3. Combine the flour, baking powder, 150 g castor sugar, 125 g butter, 2 t strong coffee, vanilla extract, eggs and milk, and mix for 3 minutes until well blended. 
  4. Spoon into the baking cups and bake for 15 to 20 minutes, or until golden. 
  5. Allow to cool on a wire rack.
  6. To make the icing and decorate: Thoroughly mix 400 g castor sugar, 125 g butter and 1 tsp of strong coffee, and pipe the mixture onto each cupcake. Drizzle with Marsala and top with cut up nougat pieces.
