Banana and pecan muffins

Serves:Makes 12 standard size muffins.

Ingredients

  • 4 bananas, sliced thinly or cut into rounds
  • 75g melted, unsalted butter
  • 2 tbsp White sugar
  • 1 egg (was large now jumbo!)
  • 5 ml vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 cups + 2 tbsp flour
  • 50 g pecan nuts, broken

Cooking Instructions

  1. Pre-heat the oven to 180°C and line a muffin tray with paper cups.
  2. In a large bowl, mash the bananas with the melted butter.
  3. Add the eggs, vanilla extract and sugar and mix well.
  4. Sift in the dry ingredients and fold in. Make sure everything is incorporated well.
  5. Fold in the chopped pecans.
  6. Fill the paper cups 3/4 with the muffin batter and place a few extra pecans on top (if desired).
  7. Bake for 25 to 30 minutes until a skewer inserted comes out clean.
  8. Allow to cool for 5 minutes in the tray before removing and allowing to cool completely on a wire rack.
