Ultimate chicken burritos

Ingredients

  • 1 stalk spring onions, thinly sliced
  • 2 carrots, peeled into ribbons using a vegetable pepper
  • fresh coriander, roughly chopped
  • 1/2 cucumber, cut into strips
  • 4 Woolworths multiseed wraps
  • 4 tbsp Sriracha sauce
  • 1 Woolworths rotisserie chicken, shredded into chunks
  • salt and freshly ground black pepper
  • 2 tbsp lemon, zested
  • 4 tbsp cream cheese
  • 3 tbsp chives, roughly chopped
  • 4 tbsp fresh coriander leaves, roughly chopped
  • 1 x 400 g red kidney beans, drained

Cooking Instructions

  1. Add all the ingredients (400 g drained red kidney beans, 4 tbsp roughly chopped coriander, 3 tbsp roughly chopped chives, 4 tbsp cream cheese, 1 zested lemon and salt and freshly ground black pepper) for the bean spread to a blender and blend until smooth. Toss the chicken in the 3 tbsp srirracha to coat.
  2. Toast the 4 Woolworths multiseed wraps in a dry pan until slightly charred. Spread the bean spread over the wrap then add the chicken, 1/2 cucumber strips, 2 carrots and 2 thinly sliced spring onions. Roll up secure the burrito and serve with extra lemon or lime.
