Clem Pedro's Winter Supper Club

The cold has officially set in – and Clem Pedro’s bringing you all the warm and comforting flavours to his week of dishes, starting with a beef stew topped with phyllo and generously brushed with a garlic and lemon butter. For the rest of the week: chicken stroganoff, Indian burritos, pumpkin and ginger soup, and sweet and sour chicken noodles turned into the most flavourful ramen.

  • Clem Pedro’s Beef Stew Pot Pie

    Take advantage of Woolworths ‘buy any 3 Save R30 on prepared mini meals’ and turn braised beef stew into an inviting pie that serves 4 with Clem Pedro’s genius phyllo hack.

    📌 Ingredients:

     

    • 3 x 220 g Woolworths Braised Beef Stew
    • 2–3 sheets of phyllo
    • 150 g Woolworths Medium Fat Butter with Garlic & Herbs
    • Squeeze of lemon
    • 315 g Woolworths Green Summer Crunch Salad


    📌 Cooking instructions:

     

    1. Preheat the oven to 180°C.

    2. Empty the braised beef stew into a skillet pan or oven-safe dish.

    3. Melt the butter and add a squeeze of lemon. Generously brush butter onto a sheet of phyllo, then fold or scrunch in the length. Place on top of beef stew. Repeat until the entire surface area of the stew is covered.

    4. Bake at 180°C for 15 minutes – or until the phyllo is crisp and golden on top.

    5. Toss salad and serve alongside finished beef stew pot pie.

  • Clem Pedro’s Chicken Stroganoff and Crumbed Mushrooms

    Mushrooms are earthy and umami rich, making them perfect for winter dishes as they add a deep, comforting flavour. Here, Clem Pedro makes it the hero of his dinner within a rich and creamy chicken stroganoff with crumbed mushrooms on the side.

    📌 Ingredients:

     

    • 3 x 220 g Woolworths Chicken Stroganoff
    • 2 x 215 g Crumbed Mushrooms with Aioli Mayonnaise


    📌 Cooking instructions:

     

    1. Pop the crumbed mushrooms into the air fryer and heat according to package instructions. In the meantime, place aioli mayonnaise into ramekins, ready for serving.

    2. Heat chicken stroganoff according to package instructions.

    3. Serve stroganoff alongside crumbed mushrooms and enjoy.

  • Clem Pedro’s Beef Mince Curry Burritos

    Indian flavours tucked into a roti to make a spicy salomi-meets-burrito – you have to try this Clem Pedro dish!

    📌 Ingredients:

     

    • 3 x 220 g Woolworths Beef Mince Curry
    • 6 Woolworths Butter Rotis
    • 150 g Woolworths Mild Mango Atchar
    • 90 g Woolworths Pickled Red Onion Petals


    📌 Cooking instructions:

     

    1. Heat the beef mince curry as well as the rotis according to package instructions.

    2. Decant the atchar and pickled red onions, placing them into smaller ramekins, ready for serving.

    3. Prepare and roll your salomis: add a generous spoonful of the mince curry and rice to each roti, roll, and give it one final toast in the pan.

    4. Serve alongside accompaniments and enjoy.

    📌 Cooking instructions:

     

    1. Heat the soup according to package instructions. Place the pumpkin wedges and ciabatta rolls in the air fryer and do the same.

    2. Once everything is warm, serve soup with pumpkin wedges – and the glaze drizzled over the top – along with a generous spoonful of chilli onion crunch.

    3. Enjoy with warm ciabatta rolls on the side.

    You’ll be making this one on repeat this winter! Clem Pedro turns Woolworths Sweet & Sour Chicken Noodles into a comforting ramen dish with just two ingredients.

    📌 Ingredients:

     

    • 1 kg Woolworths Sweet & Sour Chicken Noodles
    • 1 ½–2 cups Woolworths Chicken Bone Broth
    • 5 g coriander, optional


    📌 Cooking instructions:

     

    1. Heat sweet & sour chicken noodles according to package instructions.

    2. In the meantime, add broth to a pot on the stove and heat.

    3. Dish noodles into bowls and serve with fresh coriander and broth on the side ready for pouring over to turn noodles into a comforting ramen bowl.
