Tuna green wraps with 5 minute feta, pesto and avo dip

Cooking time: 10 minutes

Ingredients:

For the spinach pancakes:

  • 180 g flour
  • 3 large free range eggs
  • 2 cups milk
  • 4 – 5 handfuls baby spinach
  • 1 cup water
  • Optional handful of mixed herbs, stems removed
  • Feta, basil pesto and avocado dip:

  • 1 block Woolworths Organic South African Plain Feta Cheese
  • ½ ripe avocado
  • 2 t – 3 t Woolworths Fresh Basil Pesto
  • 3 T Woolworths Double Cream Plain Yoghurt
  • 2 T – 3 T water
  • *Blend to make a spreadable dip, a nice alternative to mayonnaise.
  • 4 T Woolworths Italian Parmigiano Reggiano Cheese
  • 1 Woolworths Burrantina Mozzarella, torn
  • 2 T Woolworths Basil Pesto
  • Tuna filling:

  • 2 x 170 g cans Woolworths Light Meat Tuna Shredded in Brine, drained
  • Woolworths Pickled Red Onion Petals, to serve
  • 405 g Woolworths Crunchy Summer Leaf Salad
  • Woolworths Crispy Onions, to serve
  • Cooking instructions:

    1. If you have a blender or hand blender add all of the ingredients for your spinach pancakes to a blender and blend until smooth. Ladle into a lightly oiled non-stick pan and fry for a minute or so on each side until lightly browned and cooked through.
    2. Alternatively add the spinach and the 1 cup of water to a NutriBullet and blend before combining the remaining ingredients until you have a smooth batter.
    3. Assemble by adding your tuna, feta and basil avo dip and summer leaf salad to the spinach pancakes or your favourite Woolworths wrap and top with pickled onions and crispy onions. Perfect for a quick lunch or lunch boxes.
