Panko-crumbed avo chips

Ingredients:

  1. Avocados: 2–3
  2. Flour: 140 g
  3. Eggs: 2, beaten
  4. Panko crumbs: 250 g
  5. Oil: 2–3 cups
  6. 1 x 180 g Woolworths Avocado Hummus, to serve

Method:

Slice the avocados into quarters. Dip into the flour, followed by the beaten egg, and the panko crumbs. Fry in hot oil until golden. Serve with Woolworths Avocado Hummus.

(Serves 4)

Avo chocolate mousse

Ingredients:

  1. Avocados: 2 large, ripe, peeled and chopped
  2. Cocoa powder: 50 g
  3. Vanilla extract: 1 teaspoon  
  4. Honey: 3–4 tablespoons
  5. Fresh berries, to serve

Method:

Mix all the ingredients together in a blender. Serve in bowls with fresh berries and a dusting of cocoa powder.

(Serves 2)

Avo salad boats

Ingredients:

  1. Avocados: 2, halved
  2. For the goat’s cheese and sprout avo boats:
  3. Red pepper hummus: 1 tablespoon
  4. Goat’s cheese crumbles: 4–8
  5. Black sesame seeds: 1/2 teaspoon
  6. Baby beetroots: 1–2, sliced
  7. A few radish sprouts, for garnish
  8. Micro sorrel herbs, a sprinkle

For the seeded salmon avo boats:

  1. Raspberry roulade with pink peppercorns: 100 g, 1 slice
  2. Smoked trout: 1 ribbon
  3. Sunflower seeds: 1 teaspoon
  4. Radish: 1, thinly sliced
  5. A sprinkle of radish sprouts
  6. Ancient grain bites or lentil crackers to serve

Method:
Slice the avocado in two. Peel and remove the pit. Fill one avocado with the hummus, goat’s cheese crumbles, sesame seeds, radish sprouts and beetroot. Fill the other with a slice of raspberry roulade, the smoked trout, sunflower seeds and radishes. Serve with ancient grain bites.

(Serves 4, with half an avo per person)
