Weekend entertaining made easy

Gear up for some super easy entertaining with this, the ultimate laid back weekend menu. Perfect for sharing or a last-minute party, it’s a wonderful introduction to summer.

Salad platter with salmon 2 ways:

Arrange raw baby marrow noodles on a platter. Add mini salmon fishcakes. Toss with lemon juice and olive oil. Top with smoked salmon trout and add crunchy green beans and micro-greens.

Pork fillet and vegetable kebabs:

Thread pan-fried pork fillet medallions onto skewers (try ostrich or chicken too). Alternate with golden & purple boiled beetroot and roasted red onion. Scatter with fresh basil.

Pro tip: skewers are perfect for a shared, laid-back lunch

Hasselback sweet potatoes:

Slice slits into small sweet potatoes (not all the way through!). Drizzle with a little olive oil, add fresh thyme and bake at 200°C until golden and tender.

To assemble: 

Arrange Chinese cabbage leaves (or lettuce leaves) on a large platter, along with steamed fresh peas, boiled beets, pork skewers and hasselback sweet potatoes. Serve with basil pesto and dig in.

And for something sweet:

Pineapple and lime carpaccio:

Arrange thinly sliced queen pineapple on a platter and top with fresh lime zest and juice, a grating of fresh coconut chunks and fresh mint to serve.
