Mealie meal masi-and-corn potbrood with brown butter and honey whipped butter

INGREDIENTS

150 g Woolworths Super Maize Meal
200 g Woolworths Cake Flour
½ t salt
1 t baking powder
1 x 410 g can Woolworths Cream Style Sweet Corn
2 cobbs Woolworths Supersweet Sweetcorn, kernels removed
2 free range eggs, beaten
2 cups Woolworths Full Cream Maas
For the butter:
200 g Woolworths Unsalted Butter, cubed
3 T honey

COOKING INSTRUCTIONS

  1. In a large bowl mix all the ingredients together until smooth.
  2. Pour into a greased cast iron pan or lined with greaseproof paper. Cover with a lid and place over low coals. Spoon coals over the lid and bake for 40 minutes.
  3. Remove the lid. Cool slightly and remove from the pan. Serve sliced with butter.
  4. To make the butter, place the butter in a saucepan and over a low heat and melt until golden brown, swirling as you go. Place in fridge until set.
  5. In a stand beater, whip the butter and honey until creamy and fluffy.
