Tuscan Chicken with Baby Potatoes

This one-tray Tuscan chicken requires minimal prep – and dishes. Finished off with baby potatoes, it’s the perfect roast, and with the addition of olives and sun-dried tomato pesto for extra flavour too. Served with Greek salad on the side, it’s a complete dinner. Finish it off with malva pudding bites for a complete dining experience as well from the comfort of your home.

📌 Ingredients:

Tuscan Rub Chicken with Butter Brine-based Blend
850 g Baby Potato Kit
2 T Woolworths Mediterranean Extra Virgin Olive Oil
400 g Greek salad
9-pack Malva Pudding Bites
160 g Pitted Green Olives
140 g Sun-dried Tomato Pesto

📌 Cooking instructions:

1. Place the chicken in a roasting pan along with the baby potatoes drizzled in olive oil and topped with pitted green olives. Roast in the oven according to the package instructions on the chicken.

2. Serve the chicken with sun-dried tomato pesto over the top for extra flavour.

3. Enjoy with Greek salad on the side.
