Peri-peri Butterfly Chicken with Savoury Rice Mix and Coleslaw

Marinated in a butter brine-based blend, this butterflied peri-peri chicken is succulent, tender, and saucy enough to go perfectly with savoury basmati rice – trust! Woolworths Tahini & Yoghurt Drizzle and Asian Sesame Dressing mixed through coleslaw complement the Portuguese flavours, offering a little something fresh to cut through the richness of the chicken and create a symphony of flavours.

📌 Ingredients:

  • 1x 1.5 kg Woolworths Peri-peri Butterflied Chicken
  • 500 g Woolworths Frozen Savoury Basmati Rice Mix
  • 1x 350 g coleslaw salad
  • 1x 180 g Woolworths Tahini & Yoghurt Drizzle
  • 30 ml Asian Sesame Dressing
  • 30 ml white sesame seeds, toasted

📌 Method:

1. Preheat the air fryer to 200°C, brush the air fryer basket with oil or butter. Remove chicken from all packaging and allow to cook for 15 minutes, turn the chicken over and cook for another 15 minutes or until the chicken is cooked through.

2. For the savoury rice, place 500 g of frozen rice in a microwaveable bowl and cover. Heat on 100% power for 5 minutes. Stir well and heat again for an additional 5 minutes ensuring it is hot throughout.

3. For the coleslaw, mix in the tahini and sesame dressing and top with toasted sesame seeds.
