Fantastic bean salad

  • In a bowl, combine 1 can three-bean mix and 1 can of butter beans, both drained and rinsed. Blanch 350 g fine green beans and slice.
  • To make the dressing: Grind ½ crushed garlic clove and a pinch of sea salt in a pestle and mortar.
  • Add 1 teaspoon Dijon mustard and combine. Add 1 tablespoon sherry vinegar and ¼ cup olive oil; keep grinding to mix and add 2 tablespoons honey (or to taste).
  • Toss the dressing through the canned beans and red onion, along with the zest and juice of one lemon.
  • Leave to let the flavours mingle for an hour or so. Just before serving, toss through crunchy green beans.
  • Also add 10 g chopped parsley and 3 chopped celery stalks.

  • Blend until smooth, season to taste and melt together in a hot pan.
  • Brush between the slits of baguette and grill on the braai.
  • Serve with grilled lamb chops and braaied corn on the cob. Yum!
