A simple but spectacular summer feast
Salmon, meet your 2 new besties
Get ready for some summer entertaining – whether it’s Christmas lunch or a New Year’s bash – with an easy to cook salmon and two delicious sides. Raise your game without raising a sweat.
Honey butter potato wreath:
Thinly slice peeled potatoes, enough to snugly fit into a springform tin to make a wreath shape. Drizzle with butter, season, stud with star anise and bake for 1 hour at 180°C, basting with honey and butter every 10 minutes until crispy and gold. Cool slightly before inverting on a plate to serve.
Showstopping salmon:
Take Woolworths Norwegian Salmon side with lemon and dill whipped butter and cook from frozen for 40 minutes. (That’s all! Mains, done.)
Lemony garlic greens:
Melt some of the dill and lemon whipped butter from the salmon in a pan. Add garlic and lemon slices, followed by a handful of asparagus tips. Sizzle for 2 minutes then add a handful of sugar snap peas. Sizzle for 1 minute then add a handful of sliced baby marrows. Sizzle for another minute. Remove from the heat, sprinkle with fennel curls and serve warm with the salmon.
