
Rösti with smoked salmon

Ingredients
- 6 large potatoes, peeled, halved and parboiled
- 1/2 red onion, grated
- 4 Tbsp flour
- 2 tsp salt
- white pepper to taste
- 17-100 g smoked salmon, choppped
- plain cream cheese
- 4 tsp fresh dill, chopped
- lemon wedges

Cooking Instructions
- Grate the potatoes and onion into a bowl.
- Add the flour, salt and pepper and mix well.
- In a large, hot frying pan (add a few tablespoons of vegetable oil), form mini Rösti (approximately 2 teaspoons of mixture per Rösti) and fry until golden and crisp on both sides.
- Remove from the pan and drain on kitchen paper.
- Place on a serving platter of your choice and top with a dollop of cream cheese followed with a ribbon of smoked salmon and some fresh dill and a squeeze of lemon.
- Serve immediately.
