We’re making strawberry cobbler

Winter going on a bit long? Time to get baking – try this warm and fruity strawberry cobbler for an instant comfort food pick-me-up.

Ingredients:

  1. Pink Lady apples: 2, peeled and sliced
  2. Strawberries: 400 g, tops removed
  3. Sugar: 200 g
  4. Butter: 100 g
  5. Flour: 120 g
  6. Ground cloves: 1 teaspoon
  7. Ground cinnamon: 1 teaspoon  
  8. Baking powder: 1 teaspoon
  9. Salt: ¼ teaspoon
  10. Milk: ½ cup
  11. Vanilla paste: 2 teaspoons
  12. Desiccated coconut: 40 g
  13. Flaked almonds: 100 g
  14. Icing sugar: 3 tablespoons, for dusting

Method:

  1. Preheat the oven to 180°C. Place the sliced apples and strawberries into a baking dish and sprinkle with 3 tablespoons sugar. Toss to combine.
  2. Cube the butter and dot between the fruit.
  3. Combine the flour, remaining sugar, cloves, cinnamon, baking powder, salt, milk, vanilla paste
  4.  and desiccated coconut. Mix well.
  5. Pour the batter over the strawberries and scatter with the flaked almonds.
  6. Bake for 20 minutes or until the batter is golden. Dust with icing sugar before serving.
