Our Basque cheesecake is made with cream cheese and free range eggs. The caramelised surface contrasts beautifully with the creamy custard-like texture.

HOW TO USE

• Remove from the refrigerator 30 minutes before serving. Slice with a warm knife previously dipped in hot water. Turn the slices cut side up, dust with caster sugar, and caramelise with a kitchen blowtorch. 
• Serve with fresh berries.
