Ingredients
- 200 g mature cheddar cheese
- 1 tsp Salt
- 560 g self-raising flour
- 100 g Sugar
- 250 ml buttermilk
- 4 free range eggs
- 250 ml sunflower oil

Cooking Instructions
- Heat the oven to 180ºC.
- Beat the oil, eggs, buttermilk or yoghurt and sugar* together.
- Using a wooden spoon fold in the flour, salt and cheese. Do not overmix.
- Spoon into well greased muffin trays and bake for 20 minutes or until golden brown.
*Cook's note: omit the sugar if you prefer a completely savoury taste. It won't affect the recipe.
