Cheese muffins

Ingredients

  • 200 g mature cheddar cheese
  • 1 tsp Salt
  • 560 g self-raising flour
  • 100 g Sugar
  • 250 ml buttermilk
  • 4 free range eggs
  • 250 ml sunflower oil

Cooking Instructions

  • Heat the oven to 180ºC.
  • Beat the oil, eggs, buttermilk or yoghurt and sugar* together.
  • Using a wooden spoon fold in the flour, salt and cheese. Do not overmix.
  • Spoon into well greased muffin trays and bake for 20 minutes or until golden brown.
    *Cook's note: omit the sugar if you prefer a completely savoury taste. It won't affect the recipe.
