Tomato & feta bake

Cooking Time:10 to 15 minutes, bake for 20 minutes

Ingredients

  • 2 Tbsp olive oil, to drizzle
  • 3 cloves garlic, chopped
  • 1 minced fresh chilli, chopped
  • 1/4 red onion, sliced thinly
  • 1 400g tin chopped, peeled tomatoes
  • Chunks of plain feta
  • 2 large firm red tomatoes, chopped

Cooking Instructions

  1. Preheat the oven to 180°C.
  2. Place a saucepan over a medium to low heat, add olive oil, chopped cloves garlic, chopped fresh chilli and chopped red onion and fry for 5 minutes.
  3. Add the can whole tomatoes and simmer for 10 to 15 minutes, or until thickened.
  4. Spoon into an ovenproof dish, wedge in chunks of plain feta and tomatoes, quartered, and bake for 20 minutes.
