Courgette bacon and feta soup

Ingredients

  • 600 g creamy courgette, bacon and feta soup, prepared as instructed
  • freshly ground black pepper to serve
  • Extra virgin olive oil, to drizzle over
  • 100 g Woolworths barrel aged Greek style feta
  • parsley, roughly chopped to serve
  • 35 g Woolworths spicy BBQ pork crackling

Cooking Instructions

  1. Add soup to a pot to heat up.
  2. Ladle into serving bowls.
  3. Top with lightly crushed pork crackling.
  4. Roughly chop the parsley and sprinkle over the soup.
  5. Using a microplane, finely shave the feta over.
  6. Drizzle with olive oil.
  7. Season with black pepper.
  8. Serve.
