Cauli-mash cottage pie

Ingredients

  • 1 kg Woolworths lean beef mince
  • Beef stock
  • salt and freshly ground black pepper
  • 4 tbsp Italian parsley, roughly chopped
  • 65 ml water
  • 2 tbsp tomato paste
  • 1/2 tsp chilli flakes
  • 1 onion, finely diced
  • 1 stalk celery, finely diced
  • 1 carrot, finely diced
  • 4 garlic cloves, finely chopped
  • 4 tbsp extra virgin olive oil
  • 4 tbsp cream cheese
  • 5 tbsp extra virgin olive oil
  • 2 cauliflower heads, cut into florets

Cooking Instructions

  1. Preheat oven to 180°C. Coat the cauliflower florets in the olive oil and season with salt and freshly ground black pepper before placing on an oven tray and roasting for 30 minutes or until slightly charred but tender. Add the still hot cauliflower to a blender with the cream cheese until it resembles mashed potatoes.
  2. For the filling: Heat the oil over a medium heat then add the mince to brown and caramelise. Add the garlic, carrots, celery, onion, red chilli and cook for 10 minutes to soften before adding the tomato paste, demi glace.  Stir before adding the water and seasoning then allow to reduce slightly.
  3. Add the filling to a dish and top with the cauliflower mash. Place in the oven to cook for 30 minutes and serve.
