Fiorelli and mascarpone

Ingredients

  • 1 tbsp chilli flakes
  • 500 g Woolworths fiorelli, prepared as per the instructions
  • 100 g Woolworths bacon croutini
  • fresh basil, for serving
  • 1/2 lemon, juiced
  • 2 x 105 g Woolworths mascarpone with basil pesto and sweet tomato
  • 350 g exotic tomatoes, halved and quartered
  • 350 g baby marrows
  • 4 garlic cloves, finely chopped
  • 5 tbsp extra virgin olive oil

Cooking Instructions

  1. Heat the olive oil over a medium heat. Add the garlic and chilli followed by the marrow, and tomatoes. Allow the vegetable to sauté and char slightly.
  2. In a separate bowl combine the mascarpone and lemon juice. In a large mixing bowl toss together the cooked vegetables, pasta and mascarpone.
  3. Add to a serving platter before topping with the croutons, fresh basil and a drizzle of extra virgin olive oil.
