Fiorelli and mascarpone
Ingredients
- 1 tbsp chilli flakes
- 500 g Woolworths fiorelli, prepared as per the instructions
- 100 g Woolworths bacon croutini
- fresh basil, for serving
- 1/2 lemon, juiced
- 2 x 105 g Woolworths mascarpone with basil pesto and sweet tomato
- 350 g exotic tomatoes, halved and quartered
- 350 g baby marrows
- 4 garlic cloves, finely chopped
- 5 tbsp extra virgin olive oil

Cooking Instructions
- Heat the olive oil over a medium heat. Add the garlic and chilli followed by the marrow, and tomatoes. Allow the vegetable to sauté and char slightly.
- In a separate bowl combine the mascarpone and lemon juice. In a large mixing bowl toss together the cooked vegetables, pasta and mascarpone.
- Add to a serving platter before topping with the croutons, fresh basil and a drizzle of extra virgin olive oil.
