Pepper steak pie with herbed potatoes

Ingredients
- 700 g garlic & herb potatoes, prepared as instructed
- plain cream cheese
- 1 tbsp basil, chopped
- 1 tbsp parsley, chopped
- 1 tbsp olive oil
- 1 onion, sliced
- salt and pepper
- 2 tsp white sugar
- 1 tbsp flour
- 1 cup beef stock

Cooking Instructions
- Cook the pie in the oven according to the packet instructions.
- Cut the potato packet corner, then cook the potatoes in the microwave until tender (about 7 minutes – check packet instructions).
- Place the cooked potatoes into a bowl, then crush with a fork. Stir in the cream cheese, basil, parsley and seasoning.
- Heat the olive oil in a pot, then add the onions, a pinch of salt and the sugar then cook on medium heat until the onions have softened and are browning.
- Add the flour and stir and cook for 1 minute.
- Stir in the stock, then leave to simmer for 5 minutes until sauce is thickened, then season to taste.
- Serve a slice of pie, along with the potatoes and a few spoonfuls of gravy
