Pepper steak pie with herbed potatoes

Ingredients

  • 700 g garlic & herb potatoes, prepared as instructed
  • plain cream cheese
  • 1 tbsp basil, chopped
  • 1 tbsp parsley, chopped
  • 1 tbsp olive oil
  • 1 onion, sliced
  • salt and pepper
  • 2 tsp white sugar
  • 1 tbsp flour
  • 1 cup beef stock

Cooking Instructions

  1. Cook the pie in the oven according to the packet instructions.
  2. Cut the potato packet corner, then cook the potatoes in the microwave until tender (about 7 minutes – check packet instructions).
  3. Place the cooked potatoes into a bowl, then crush with a fork. Stir in the cream cheese, basil, parsley and seasoning.
  4. Heat the olive oil in a pot, then add the onions, a pinch of salt and the sugar then cook on medium heat until the onions have softened and are browning.
  5. Add the flour and stir and cook for 1 minute.
  6. Stir in the stock, then leave to simmer for 5 minutes until sauce is thickened, then season to taste.
  7. Serve a slice of pie, along with the potatoes and a few spoonfuls of gravy
