Frozen peanut butter chocolate

Ingredients

  • non-stick cooking spray
  • 1/2 cup roasted and salted peanuts, chopped
  • 1 cup double cream, whipped to stiff peaks
  • 2 bananas
  • 3/4 cup smooth peanut butter
  • 340 g dark chocolate chunks

Cooking Instructions

  1. Coat a 21 x 11cm loaf pan with non-stick cooking spray and line with wax paper, allowing it to overhang on both the long sides. Set aside.
  2. Melt the chocolate and cool to room temperature.
  3. In a food processor, purée the bananas until smooth.
  4. Stir the peanut butter into the cooled chocolate until combined, then stir in the banana purée.
  5. Gently fold in the whipped cream until combined.
  6. Pour the mixture into the prepared pan and top with the chopped peanuts.
  7. Fold the wax paper over the top, wrap tightly in plastic wrap and freeze for at least 3 hours until firm.
  8. To serve, remove the loaf from the pan-run a hot tea towel across the sides and the bottom of the pan if necessary- cut into about 2 cm thick slices and serve immediately.
