Frozen peanut butter chocolate

Ingredients
- non-stick cooking spray
- 1/2 cup roasted and salted peanuts, chopped
- 1 cup double cream, whipped to stiff peaks
- 2 bananas
- 3/4 cup smooth peanut butter
- 340 g dark chocolate chunks

Cooking Instructions
- Coat a 21 x 11cm loaf pan with non-stick cooking spray and line with wax paper, allowing it to overhang on both the long sides. Set aside.
- Melt the chocolate and cool to room temperature.
- In a food processor, purée the bananas until smooth.
- Stir the peanut butter into the cooled chocolate until combined, then stir in the banana purée.
- Gently fold in the whipped cream until combined.
- Pour the mixture into the prepared pan and top with the chopped peanuts.
- Fold the wax paper over the top, wrap tightly in plastic wrap and freeze for at least 3 hours until firm.
- To serve, remove the loaf from the pan-run a hot tea towel across the sides and the bottom of the pan if necessary- cut into about 2 cm thick slices and serve immediately.
