Retro prawn cocktail

Ingredients

  • 400 g frozen, fully cooked small prawns
  • 2 cups Extra creamy mayonnaise
  • 2 tbsp Tabasco sauce
  • 2 tsp Celery salt
  • 2 Tbsp Worcestershire sauce
  • Freshly ground black pepper, to taste
  • 3 tbsp chives, finely chopped
  • 1 lemon, zested and juiced
  • 2 avocados, roughly cubed
  • cos lettuce leaves, for serving
  • ciabatta, thinly sliced
  • 3 Tbsp butter, melted
  • 3 garlic cloves, finely chopped
  • 1 tsp smoked chilli flakes
  • 2 Tbsp fresh parsley,finely chopped

Cooking Instructions

  1. Add the mayo to a mixing bowl along with the Tabasco, celery salt, Worcestershire sauce and freshly ground black pepper as well as the chives, lemon zest and juice and avocado. 
  2. Stir together with the prawns before adding to martini glasses that have been lined with cos lettuce.  Serve with the garlicky toast.
  3. For the garlicky toast: Brush the toast with the butter that has been combined with the garlic, chilli flakes and parsley. 
  4. Place in the oven to toast for about 1 minute at 200ºC or until golden and crisp
