Retro prawn cocktail
Ingredients
- 400 g frozen, fully cooked small prawns
- 2 cups Extra creamy mayonnaise
- 2 tbsp Tabasco sauce
- 2 tsp Celery salt
- 2 Tbsp Worcestershire sauce
- Freshly ground black pepper, to taste
- 3 tbsp chives, finely chopped
- 1 lemon, zested and juiced
- 2 avocados, roughly cubed
- cos lettuce leaves, for serving
- ciabatta, thinly sliced
- 3 Tbsp butter, melted
- 3 garlic cloves, finely chopped
- 1 tsp smoked chilli flakes
- 2 Tbsp fresh parsley,finely chopped

Cooking Instructions
- Add the mayo to a mixing bowl along with the Tabasco, celery salt, Worcestershire sauce and freshly ground black pepper as well as the chives, lemon zest and juice and avocado.
- Stir together with the prawns before adding to martini glasses that have been lined with cos lettuce. Serve with the garlicky toast.
- For the garlicky toast: Brush the toast with the butter that has been combined with the garlic, chilli flakes and parsley.
- Place in the oven to toast for about 1 minute at 200ºC or until golden and crisp
