Coronation chicken wraps

Ingredients
- fresh coriander leaves, to assemble
- 50 g cashew nuts, toasted and roughly chopped, to assemble
- 1/2 cucumber, sliced into ribbons, to assemble
- 90 g baby gem lettuce, to assemble
- 4 multiseed wraps, to assemble
- maldon salt and pepper, to taste
- 4 tbsp fresh coriander, finely chopped
- 4 tbsp plain yoghurt
- 4 heaped tbsp good quality mayonnaise
- 1/2 Woolworths rotisserie chicken, roughly shredded (bones and skin discarded)
- water
- 2 tbsp fruit chutney
- 1 tbsp tomato paste
- 1 tbsp mild curry powder
- 1 onion, grated
- 1 tbsp oil

Cooking Instructions
- Sauté onion in oil until translucent.
- Add curry powder and tomato paste and cook for a minute.
- Mix in chutney and water, then simmer for 5 minutes.
- Remove from the heat, then mix in the shredded chicken, mayonnaise, yoghurt, coriander and season to taste.
- Heat the wraps to soften, then fill with lettuce, cucumber, coronation chicken, nuts and fresh coriander.
- Fold and roll to encase the filling, then slice into desired serving size.
