Rustic croque monsieur

Ingredients

  • 12 slices Beech smoked Gyspy ham
  • 8 thick slices Ciabatta
  • 1/2 cup parmesan, finely grated
  • 1 cup plus 8 slices 2 month mature Gouda, grated
  • 2 cups 1,5 L milk
  • 2 tbsp Gluten free all purpose flour
  • 2 tbsp unsalted butter, plus more for bread

Cooking Instructions

  1. Melt butter in a saucepan over medium heat.
  2. Whisk in flour.
  3. Add milk; bring to a simmer.
  4. Cook for about 5 minutes. Remove from heat.
  5. Add grated cheeses and whisk until melted and smooth.
  6. Butter bread.
  7. Arrange half the slices, buttered side down, on a rimmed baking sheet.
  8. Top each with 2 slices Gouda and 3 slices ham.
  9. Spread mustard onto unbuttered sides of remaining bread.
  10. Place on top of ham, buttered side up.
  11. Preheat broiler. Heat a grill pan or skillet over medium heat. Cook each sandwich until golden brown and cheese melts, about 5 minutes per side.
  12. Return to baking sheet.
  13. Spoon 1/3 cup sauce over top of each sandwich.
  14. Broil until tops are bubbling and golden brown.
  15. Serve.
