Iced tea vodka cocktail

Serves:4
Prep Time:10 minutes, plus freezing time

Ingredients

  • 2 x 160 g raspberry punnets
  • 1 pineapple, skin and core removed, then roughly chopped

Cooking Instructions

You will also need the following: 

  • 3/4 cup vodka
  • 2 cups iced tea

Method:
1. Peel and core the pineapple, cut the flesh into chunks and blend in a food processor until smooth. 
2. Place in the freezer for 3 hours, or until slightly frozen.
3. Mash the raspberries and divide between 4 cocktail glasses.
4. Spoon over the frozen pineapple.
5. Pour 50 ml vodka into each glass and top up with iced tea.
