Ingredients
- 1 cup milk
- 2 large free range eggs
- 1 cup cream, whipped
- 1 T hot chocolate powder
- Canola oil, for frying
- 2 x double espresso shots
- 1 box Woolworths Flapjack Mix

Cooking Instructions
- Prepare the flapjack mix according to package instructions then add the espresso.
- Heat a small non-stick pan over a medium heat and heat a little canola oil. The secret to a good crêpe is to wipe out the pan with kitchen paper every time you grease it to reduce excess oil and any batter that may cause the next pancake to stick.
- Ladle a scoop of batter into the pan and swirl over the surface to make an even layer, working from the inside out. Wait for small bubbles to appear around the edges before flipping. Stack and repeat for best results.
- To make the mocha cream, fold the hot chocolate and espresso powder into the whipped cream. Dollop onto your pancake stack and add a drizzle of maple syrup.
