Ingredients
- Hearty vegetable soup mix
- 1 onion, chopped
- 4 cloves of garlic, crushed
- 8 cups water
- 1 bay leaf
- Red kidney beans
- 3 free-range chicken breasts, chopped into 3 pieces
- 2 T Italian parsley
- 6 slices Crushed wheat sourdough to serve

Cooking Instructions
- Place all the ingredients in a large pan except the beans, chicken and parsley.
- Simmer until veggies are soft.
- Add the chicken breast and beans together with the brine and simmer for 6 minutes.
- Check seasoning, garnish with chopped parsley and serve immediately.
Cook’s notes: Use dill instead of parsley for a more complex flavour dimension.
