Chicken, barley and vegetable soup

Ingredients

  • Hearty vegetable soup mix
  • 1 onion, chopped
  • 4 cloves of garlic, crushed
  • 8 cups water
  • 1 bay leaf
  • Red kidney beans
  • 3 free-range chicken breasts, chopped into 3 pieces
  • 2 T Italian parsley
  • 6 slices Crushed wheat sourdough to serve

Cooking Instructions

  1. Place all the ingredients in a large pan except the beans, chicken and parsley.
  2. Simmer until veggies are soft.
  3. Add the chicken breast and beans together with the brine and simmer for 6 minutes.
  4. Check seasoning, garnish with chopped parsley and serve immediately.

Cook’s notes: Use dill instead of parsley for a more complex flavour dimension.
