Braaied Ostrich Steaks

Ingredients
- 500 g ostrich steaks
- sweetcorn mini cobs
- 300 g rainbow slaw
- 400 g crushed wheat sourdough bread
- 1 lemon, juiced and zested
- 1 garlic clove, crushed and finely chopped
- 1 T Italian parsley, finely chopped
- 6 T olive oil

Cooking Instructions
- Slice each steak into 3 pieces.
- Brush the Ostrich steaks with olive oil and season with salt & pepper on both sides.
- Place Ostrich Steaks on the braai and cook for 45 seconds on each side for medium rare.
- Simultaneously place the sweetcorn on the braai and turn continuously until cooked through and beginning to char (about 10 min).
- Mix the Rainbow Slaw, half the lemon juice, 2 tablespoons of olive oil, salt and pepper to taste, in a bowl, until salad is well dressed.
- In a small bowl, combine 4 tablespoons of olive oil, half the lemon zest, the crushed garlic and chopped parsley. Season with salt and pepper to taste.
- Brush one side of 4 bread slices with the garlic, lemon and parsley oil and place face down on the braai until lightly toasted (about 2 min).
