Braaied Ostrich Steaks

Ingredients

  • 500 g ostrich steaks
  • sweetcorn mini cobs
  • 300 g rainbow slaw
  • 400 g crushed wheat sourdough bread
  • 1 lemon, juiced and zested
  • 1 garlic clove, crushed and finely chopped
  • 1 T Italian parsley, finely chopped
  • 6 T olive oil

Cooking Instructions

  1. Slice each steak into 3 pieces. 
  2. Brush the Ostrich steaks with olive oil and season with salt & pepper on both sides. 
  3. Place Ostrich Steaks on the braai and cook for 45 seconds on each side for medium rare. 
  4. Simultaneously place the sweetcorn on the braai and turn continuously until cooked through and beginning to char (about 10 min).  
  5. Mix the Rainbow Slaw, half the lemon juice, 2 tablespoons of olive oil, salt and pepper to taste, in a bowl, until salad is well dressed. 
  6. In a small bowl, combine 4 tablespoons of olive oil, half the lemon zest, the crushed garlic and chopped parsley. Season with salt and pepper to taste. 
  7. Brush one side of 4 bread slices with the garlic, lemon and parsley oil and place face down on the braai until lightly toasted (about 2 min).
