Swiss chard, chickpea & feta pilau

Ingredients

  • 300 g Swiss chard
  • 1/2 large onion, chopped
  • 225 g Butter
  • 3 cloves garlic, crushed
  • 300 g basmati rice
  • 3 cups chicken/ vegetable stock
  • 1 x 400g can chickpeas, drained and rinsed
  • 100 g Feta cheese
  • 2 Tbsp olive oil, to drizzle
  • 2 tbls roasted almonds, toasted, plus extra to garnish

Cooking Instructions

  1. In a saucepan, gently soften the onion in the melted butter.
  2. Stir in the garlic and chard. Cover and leave for 5 minutes until the chard has wilted. Season lightly.
  3. Stir in the rice, then pour in the stock and bring to a boil.
  4. Add the chickpeas and cover tightly. Reduce the heat, and simmer for 15 minutes, or until the rice is tender.
  5. Add the crumbled feta and cover again, then turn off the heat and leave for 5 minutes to steam the rice and melt the feta.
  6. Drizzle with the olive oil and a grinding of black pepper.
  7. Sprinkle with the almonds and serve immediately.
