Grilled asparagus with lime

Serves:6

Ingredients

  • sea salt and freshly ground pepper, to taste
  • 2 Tbsp demerara or brown sugar
  • 1/4 cup lime juice
  • 1/2 red onion, finely diced
  • 1 red pepper, seeded and diced
  • 500 g asparagus spears
  • 500 g petits pois
  • 6 tbsp olive oil

Cooking Instructions

  1. Preheat a pan to high 
  2. Toss the asparagus with the olive oil and grill, turning them for 3-4 minutes or until bright green and tender. Transfer to a bowl. 
  3. Cook the peas in a saucepan of salted water, then drain and add to the asparagus. 
  4. For the dressing, comine the red pepper, onion, lime juice, olive oil, mint and sugar in a bowl. Mix well and season with salt and pepper. 
  5. Drizzle the dressing over the asparagus and peas, and toss to combine. 
  6. Arrange on a serving platter and serve.
