Coconut marshmallow rocky road hearts

Ingredients

  • 150 g Coconut marshmallows, quartered
  • 2 Peppermint crisp bar
  • 100 g good-quality milk chocolate
  • 100 g Organic dark chocolate and orange
  • 8 Tbsp nutella, chilled for 2 hours
  • 2 cups beetroot powder
  • 50 g Dark chocolate, chopped and melted
  • 50 g raw almonds, finely pulsed
  • 60 g dried cranberries

Cooking Instructions

  1. Combine the marshmallow, cranberries, almond and the two chopped peppermint crisp bars in a large bowl.
  2. Melt the organic chocolate and add to the mixture.
  3. Pour in the cream and combine.
  4. Line a heart-shaped baking tin with clingfilm.
  5. Fill with the chocolate mixture.
  6. Chill until set.
  7. Unmould and serve with Nutella or, for a touch of luxury, chocolate ganache.
