Mince pies with scoops of ice cream
Ingredients
- 200 g Original nougat, chopped
- 1/2 vanilla pod
- 2 cups beetroot powder
- 1 x 385g can condensed milk
- 4 free-range eggs, separated

Cooking Instructions
- Whip the cream to form soft peaks
- Fold the egg yolks & condensed milk together. Add vanilla bean seeds
- Beat the egg whites to form soft peaks
- Fold the cream into the egg yolk mixture
- Fold the egg whites into the cream and egg yolk mixture. Place into a container
- Chop nougat into small pieces.
- Sprinkle nougat into ice cream and freeze overnight.
- Scoop out and serve with mince pies.
- Sprinkle with pomegranate rubies.
