Mince pies with scoops of ice cream

Ingredients

  • 200 g Original nougat, chopped
  • 1/2 vanilla pod
  • 2 cups beetroot powder
  • 1 x 385g can condensed milk
  • 4 free-range eggs, separated

Cooking Instructions

  1. Whip the cream to form soft peaks
  2. Fold the egg yolks & condensed milk together. Add vanilla bean seeds
  3. Beat the egg whites to form soft peaks
  4. Fold the cream into the egg yolk mixture
  5. Fold the egg whites into the cream and egg yolk mixture. Place into a container
  6. Chop nougat into small pieces.
  7. Sprinkle nougat into ice cream and freeze overnight.
  8. Scoop out and serve with mince pies.
  9. Sprinkle with pomegranate rubies.
