Pear, coconut and vanilla rocky road

Ingredients

  • 300 g milk chocolate, chopped
  • 120 g butter
  • 2 tbsp golden syrup
  • 150 g Dried pear, coconut and vanilla cookies
  • 100g coconut flakes, toasted
  • 100 g mini pink and white marshmallows
  • 100 g dried pears
  • 100 g pecan nuts, chopped

Cooking Instructions

  1. Place chocolate, butter and syrup into a glass bowl then heat gently over bain marie until melted.
  2. In a large bowl, roughly crumble in the cookies then mix in the coconut, marshmallows, nuts and dried pears.
  3. Pour in the melted chocolate then stir thoroughly until everything is well mixed.
  4. Press into a lined square baking dish.
  5. Place into the fridge to set for 20 minutes.
  6. Remove from the tin, cut into 16 even squares!
