Grape, bacon and feta crostini

Ingredients

  • 100 g streaky bacon, thinly sliced
  • 1 tbsp honey
  • 2 cups Flavourburst grapes, halved
  • 1/4 tsp red chilli flakes
  • 4 slices ciabatta bread, toasted
  • 1/2 cup Feta, crumbled
  • 3 tbsp Italian parsley, roughly chopped
  • balsamic cream, for drizzling
  • extra virgin olive oil, for drizzling

Cooking Instructions

  1. Cook the bacon in a medium-sized pan over a medium-heat, stirring occasionally for about 5 minutes or until crisp. Leave to cool on paper towels, then crumble.
  2. Bring the honey and 2 tablespoons of water to a boil in the same pan as the bacon.
  3. Add the grapes and chilli flakes. Cook for about 5 minutes or until the grapes are glazed and starts to soften.
  4. Mix in the bacon and season to taste.
  5. Spread the toasts with the feta and top with the grape mixture. Sprinkle with the chopped parsley and drizzle with the olive oil and balsamic cream.
