Prawn and avocado salad

Ingredients
- 1-2 Limes, cut into wedges
- 1 Tbsp black sesame seeds
- 800 g Frozen cooked prawns, defrosted
- 1 ripe avocado, sliced
- 3 Mini cucumbers, cut into thin ribbons with a vegetable peeler
- 6 handfuls Fresh rocket leaves
- 450 g mange tout
- olive oil
- 2 tsp sesame oil
- 1 tbsp fish sauce
- 1 lime, zested and juiced

Cooking Instructions
- To make the salad dressing, combine the lime juice with the fish sauce, sesame oil and olive oil and whisk together.
- For the salad, combine the mange tout, rocket, cucumber, avocado and cooked prawns.
- Drizzle the dressing over the salad, sprinkle with sesame seeds and serve with the lime wedges.
