Prawn and avocado salad

Ingredients

  • 1-2 Limes, cut into wedges
  • 1 Tbsp black sesame seeds
  • 800 g Frozen cooked prawns, defrosted
  • 1 ripe avocado, sliced
  • 3 Mini cucumbers, cut into thin ribbons with a vegetable peeler
  • 6 handfuls Fresh rocket leaves
  • 450 g mange tout
  • olive oil
  • 2 tsp sesame oil
  • 1 tbsp fish sauce
  • 1 lime, zested and juiced

Cooking Instructions

  1. To make the salad dressing, combine the lime juice with the fish sauce, sesame oil and olive oil and whisk together. 
  2. For the salad, combine the mange tout, rocket, cucumber, avocado and cooked prawns. 
  3. Drizzle the dressing over the salad, sprinkle with sesame seeds and serve with the lime wedges.
