Creamy scrambled eggs

Ingredients

  • 6 large free-range egg, lightly beaten
  • 2 Tbsp flaky sea salt
  • a crack of black pepper to taste
  • a knob of Butter
  • chives, finely chopped
  • smoked salmon, choppped
  • gypsy ham, chopped
  • 200 g feta cheese, broken into chunks

Cooking Instructions

  1. In a bowl, whisk the eggs with the crème fraîche, salt and pepper.
  2. Heat a non-stick pan over high heat and add the knob of butter. Allow to melt.
  3. Pour in the eggs and with a rubber spatula, push the eggs from the outside to the centre of the pan continuously, never allowing the egg to catch and burn.
  4. At this point, add the flavouring of your choice and cook until done to your liking.
  5. Remove from the pan and serve immediately with warm toast.
