Simple coconut macaroons

Ingredients
- dark chocolate, grated, to decorate
- 1 cup fresh coconut, shaved
- 2 tbsp Xylitol
- a pinch sea salt, plus extra to taste
- 2 2 free-range egg whites
- 3 wide strips lemon zest
- 3 cups desiccated coconut + extra for sprinkling

Cooking Instructions
- Preheat the oven to 180’c and line a baking tray with baking paper.
- Whisk the egg white and salt until stiff peaks form.
- Fold in the lemon zest, Xylitol and desiccated coconut. Use an ice cream scoop to form rounds and roll in shaved coconut.
- Place on lined tray and bake until golden, roughly 12mins.
- Allow macaroons to cool and then dip or drizzle in melted chocolate and allow chocolate to harden or simply enjoy immediately.
