Hot cross bun pumpkin pudding

Ingredients

  • 1 cup mashed pumpkin
  • 1/2 cup chocolate chips
  • 4 tbsp butter
  • 1/2 tsp ground cinnamon
  • 4 tbsp brown sugar
  • 1/2 tsp salt
  • 500 ml cream
  • 250 ml milk
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/2 cup castor sugar
  • 4 eggs
  • 6 extra-spicy hot cross buns

Cooking Instructions

  1. Preheat oven to 180C
  2. Cut the hot cross buns into cubes then place into a greased oven dish, along with the white chocolate chips.
  3. In a bowl, whisk together the eggs, pumpkin, castor sugar, vanilla, cinnamon, cream and salt, then pour onto the hot cross buns and leave to stand for 10 minutes.
  4. Mix together the sugar and cinnamon, then sprinkle over the pudding.
  5. Dot with the butter, then bake for 45 minutes in a bain marie until the custard has set.
  6. Serve with vanilla ice cream.
